It’s a beautiful Saturday, and I was undecided on what to make for lunch! I wanted to make something simple and easy. Also, a dish that will not have me standing in the kitchen long. These delicious chicken Tostadas came to mind. Let me show how I made it.
What you will need
- 1 pack of boneless and skinless chicken ( I used chicken tenderloins)
- 1 pack of shredded Mexican cheese
- White Corn Tortillas ( this recipe is for 6 Tostadas)
- 1/2 red onion diced
- At least 1 cup of black beans
- 1 bunch of cilantro
- Your favorite salsa ( I used medium)
- Cooking oil( I used olive oil)
- Seasoning used on chicken: 1 packet of sazon, 1/2 packet of chicken goya, garlic powder, black pepper, onion powder, cumin powder, chili powder
Directions
- Preheat oven to 400 degrees
- Prepare chicken by cleaning and cutting chicken into small pieces. Season chicken with seasonings mentioned above or your own seasoning blend.
- Add 1 tbsp of olive or vegetable oil to a pan. Heat oil on medium high, then add chicken. Cook chicken until done and brown.
- While the chicken is cooking, on a baking sheet, add 6 tortillas. On both sides of the tortilla spread olive oil. Put the tortillas in the oven for 5-6 minutes,then take pan out and flip tortillas, bake for another 5 minutes. Then, take the tortillas out of the oven.
- Here is the fun part! Start layering the corn tortillas with chicken, salsa, black beans, red onion, cheese, and top with cilantro. ( These toppings are optional, add your favorites!)
- Place back in the oven for 5-7 minutes, depending on how much cheese you added. You are only placing in the oven to melt cheese!
