Easy Curry Chicken (without coconut milk)

Curry Chicken is one of my favorite Jamaican dishes. This dish is just packed with flavors and spices that many can’t resist. No, I’m not from the islands but I have a easy Chicken Curry recipe that your family will love. Matter fact, everytime I make this dish its with love.

Are you looking for how to make curry chicken without coconut milk? This recipe does not contain coconut milk like most traditional curry chicken. The juice that this chicken makes is what makes it so comforting. The added potatoes just soaks right in with the chicken. My mouth is watering at this point. When your chicken is done, lay it over a nice bed of rice. This easy recipe can be made for Sunday Dinner or any day of the week you have a craving for it. turmeric, chili powder, 1-2 packets goya chicken Seasonings, black pepper, cumin

IF YOU CHOOSE TO ADD COCONUT MILK, I SUGGEST ADD IT WHILE POTATOES COOK

Curry chicken and white rice

Ingredients

  • 5-6 Boneless and Skinless chicken Thighs or chicken breast

  • 1 bell pepper ( any color is fine)

  • 1 Yellow onion

  • 1 tbsp-Fresh garlic or minced

  • 1-2 potatoes peeled and diced

  • 2-3 cups-Water

  • 2 tsp- flour or cornstarch

  • 3 tbsp Curry powder(Add to your liking)

  • 2 Tsp-Olive oil or butter

  • 5-6 Boneless and Skinless chicken Thighs or chicken breast
  • 1 bell pepper ( any color is fine)

  • 1-2 potatoes peeled and diced
  • 2-3 cups-Water
  • 2 tsp- flour or cornstarch
  • 3 tbsp Curry powder(Add to your liking)
  • Other Seasonings/spices: turmeric, chili powder, 1-2 packets goya chicken Seasonings, black pepper, cumin
  • 2 Tsp-Olive oil or butter
  • *This recipe is without Coconut Milk * Add if you desire
  • DOUBLE RECIPE IF NEEDED, THIS RECIPE is small for family 3-4
Curry Chicken

Directions

  • First, prepare the chicken and vegetables. If your using chicken Thighs cut right in half, breast you can cut into a few pieces.(Make sure to rinse and clean chicken) I always season my chicken pieces, this is optional. Chop up your bell peppers and onions. Also, peel and chop up potatoes, place in cold water until ready for it.
  • Let’s get the flavors going. In your pot add olive oil and turn stove on medium. Add bell pepper, onion, garlic, while cooking add turmeric, cumin, chili powder(at least 1 tbsp of each) , add 2-3 tsp of flour over vegetables , stir til dissolved. Cook veggies for about 2 minutes.
  • Next, add chicken, stir and cook for about 6 minutes or until pink is somewhat gone. Then add water to cover chicken. Turn up heat to medium high. Let chicken boil for about 15 minutes with lid on.
  • Now add curry powder and chicken Goya chicken seasoning or the brand you like to use and a some black pepper. Let cook for about 20 more minutes with lid on. (FOR MORE OF YELLOW/ORANGE LOOK ADD MORE TUMERIC AND CURRY)
  • Then, add the potatoes and let cook/stew for about 25-30 more minutes or until potatoes soft. Chicken should be cooked and falling apart at this point.
