Easy Roasted Parmesan Potatoes

Today is a spaghetti type of day! Whenever I make this classic dish, I try to make it more than just meat sauce and spaghetti pasta. The sides you put with a dish can turn a budget friendly meal to a fancy looking one.  So today, I added roasted potatoes to the menu. These potatoes are seasoned and tossed in parmesan cheese. Roasted parmesan potatoes are so flavorful and can be added to many of your favorite dishes. This recipe only has a few ingredients and very easy to prepare. You can use your choice of potatoes, but for this recipe, I used russet potatoes. This recipe is the perfect side dish when you want something different. Let’s jump into the easy recipe!

What you will need

  • 2-3 Russet potatoes (can substitute for yukon or red potatoes)
  • 1/2 cup of Italian dressing
  • 5-6oz of Shredded Parmesan
  • 1-2 tbsp of vegetable or olive oil
  • Seasonings used: (Dash) garlic & herb, paprika, garlic powder, 1 chicken bouillon packet, black pepper, parsley
  • This recipe feeds a family of 3-4, double recipe if needed

How to make Roasted Parmesan Potatoes

  1. Peel and rinse potatoes with cold water. ( leave skin on if you desire)
  2. Preheat oven to 375 degrees
  3. Slice potatoes in half and cut into medium size pieces.
  4. Then season potatoes to your liking with the seasonings I listed or your own blend. Mix seasonings in good.
  5. Next, add Italian dressing and at least a handful of parmesan cheese. Mix into potatoes well.
  6. Add cooking oil to bottom of baking sheet. I Like to line the bottom with aluminum foil and rub the oil in with a paper towel. ( This will make it easier to clean pan when done)
  7. Add a handful or remaining parmesan cheese to the bottom of the pan, spread out evenly.
  8. Add seasoned potatoes evenly to the pan and let bake uncovered for 1 hour. ( check the potatoes at about 45 minutes into cooking)
  9. The roasted parmesan potatoes will be crispy on the outside and soft in the inside when done.
