This recipe is one of my old time favorites. I love a cheesy casserole dish! Chicken Broccoli Rice Casserole is definitely a dish that is cheesy and fulfilling. This classic casserole dish is very easy to make. Also, has simple ingredients! This meal won’t break the bank, everything will cost less than $25. Ingredients
Two boneless chicken breast (or use already cooked rotisserie chicken)
2 -3 cans of cream of chicken soup or cream of mushroom (I use 1 can of mushroom and 2 cans of cream of chicken)
1 Yellow onion (optional)
1 bag of frozen or 2-3 stalks of fresh broccoli
1 bag of frozen or 2-3 stalks of fresh broccoli
1 cup of rice (parboil or white long grain)
2 cups of cheddar cheese ( or to your liking, this is a cheesy dish!)
1/2 stick of butter or 2 tbsp of cooking oil
Directions
- First, prepare chicken breast by cleaning/rinsing and seasoning. I recommend cutting breast in half or butterfly cut before seasoning and cooking. If your using cooked rotisserie chicken, shred or piece up chicken set aside.
- Place chicken in frying pan (cook with butter or oil)on medium cook until golden/done. This should take 15-20 minutes. While chicken is cooking start boiling rice in a pot.
- Preheat oven to 365-375 Degrees
- Now take cooked chicken, cut up in to cubes or small pieces.
- In a mixing bowl, add cooked rice, diced onion and soup. Mix together then add thawed broccoli and chicken. Mix together, then add at least a cup of cheddar cheese. Mix cheese as well. This is optional but I add any extra seasoning I want during this step.( I use about 2 tbs of chicken bouillon)
- In a greased baking or casserole dish add mixed ingredients, then top it off with more cheddar cheese. Place in oven for 40- 45 minutes, cooking uncovered for last 10 minutes. Cheese will be melted and crisp around edges when done.
