I love a easy breakfast dish! This tater tot breakfast casserole is definitely a favorite! Super easy to make and packed with flavor. This is a comforting breakfast bake that the whole family will enjoy. Great for Saturday morning breakfast/brunch. This casserole is perfect for your breakfast/brunch menu for Mother’s and Father’s day. And you can’t forget holidays like; Easter, and Christmas. Tater Tot breakfast casserole has a few ingredients; and takes about 1 hour to bake. I use ground breakfast sausage. You are more than welcome to substitute the meat, or go meatless. I chop up onion and bell pepper to add to sausage. These vegetables can be left out for those who don’t like it. What keeps this casserole together? The eggs, milk, and cheese. I combine milk and eggs together, and pour this mixture over the tots. Then everything is topped with cheese before entering the oven. Let’s jump into this easy recipe!
What you will need
1 bag of frozen tater tots (I used Walmart brand 2 LB bag)
1lb ground breakfast sausage (Recommend: Jimmy dean/ regular)
6 eggs
1 cup of milk
1- 8oz bag of cheddar cheese (Suggestions, use cheddar jack shredded)
1/2 yellow onion or 1 small onion chopped
1 red or green bell pepper chopped
Directions
- First prepare ground sausage, bell pepper, and onion. Season and brown sausage and vegetables in pan over medium heat. Cook sausage until all pink is gone.
- Preheat oven to 375- 400 degrees
- Next mix together frozen tots and ground sausage. Then pour half into a baking dish,and Top with a handful of cheese. Then pour the remaining tater tots and sausage into dish.
- Now mix together eggs, and milk. Then pour mixture over the sausage and tater tots.
- Last, top with remaining cheese. Then place covered in oven for about 40-45 minutes, and uncovered for the last 20-25 minutes. This will make sure the egg in the middle cooks. Cook time will be approximately total of 1 hour and 15 minutes.
- When done the casserole will be firm + cheesy and the tator tots at the top will be crispy. Let cool for at least 5-7 minutes before serving. This recipe can also be made the night before, just let cool and store in fridge overnight. Then warm back up covered in oven for 20 -25 minutes or just warm up in microwave! ENJOY!
