Cold weather is finally approaching my part of the world, and Soup has been on my mind! There is nothing like a warm, comforting soup on these cool days to come. This cheeseburger soup was the perfect choice for today. Cheeseburger soup is very easy to make and can be prepared to your liking.
So…what is cheeseburger soup? This creamy soup is packed with delicious flavors of a cheeseburger. Some may even add; pickles, mustard, and ketchup to top this soup off. For this easy recipe I used simple ingredients: Ground beef, onion, carrots, potatoes, and cheese. This soup is stewed in a beef broth, and thickened with milk, butter and flour. Let’s get into this easy soup recipe.

You can add bacon, sour cream, mustard, pickles, tomatoes,green onions
Ingredients
1lb of ground beef
1-2 Russet or gold peeled and cut potatoes(should be cut in to medium size pieces)
1 diced onion
1 diced carrot
1 diced tomato (optional)
celery (optional)
16oz block of Velveeta cheese (can substitute for cheddar)
1/2 cup of milk
beef or chicken broth ( I used a whole 32 oz)
At least 1/2 stick of butter
1 -2 tbsp of flour
Directions
- Add a few spoons of cooking oil to pot and turn on medium heat, add ground beef. Season ground beef with seasonings mentioned in details or your own season blend.( Try adding worcestershire sauce!) When ground beef is done cooking drain if needed and set to the side.
- In that same pot add diced onion, carrots, (celery) and let saute for about 2-3 minutes. This is optional, I add at least a teaspoon of chicken bouillon while the vegetables saute! This soup is delicious with flavor.
- Now add beef broth, at least 3 cups or whole whole 32oz. Also add potatoes and (diced tomatoes). Let cook for about 40-45 minutes(until potatoes are soft). *Reduce heat when done*.
While broth and vegetables are cooking, cut Velveeta cheese into medium size cubes, set to the side. - To thicken soup, Let’s make a roux. In a pan add butter, let the butter melt, then add flour. Mix in until smooth. Then add this to the pot of soup. Stir this mixture into soup, then add milk, Stir the soup some more. Then add ground beef.
- Last, add cheese and reduce heat to medium low. Stir soup again and let cook for another 15-20 minutes. This will let the cheese melt. Turn soup on low or completely off when done.
