Cheesy Rice and Sausage

This one pan cheesy rice and sausage recipe is so delicious! If you are looking for an easy, budget friendly meal, you have come to the right food blog! This dish can be made for lunch or dinner. Today, I prepared this meal for a Saturday lunch. The best part about one pan recipes is that it makes enough for leftovers. So, this will probably be dinner for my family as well. You can add as many ingredients as you want to make this meal stretch. You will need about 2 cups of rice, one whole sausage link, or two-three links if you are using carton sausage. For vegetables, I only added onion and bell pepper. You can add any vegetables. Last but not least, you will need shredded cheese. Let jump into this easy one pan recipe!

One Pan Cheesy Rice and sausage

Ingredients

  • 2-3 Smoked Sausages(for carton), or 1-2 whole Sausage links
  • At least 2 cups of parboil rice or your choice of rice
  • 8oz bag- Triple cheddar shredded cheese or your choice of cheese
  • 1 yellow onion
  • 1 red bell pepper
  • 2-3 tbsp of Olive Oil
  • Cold water
  • Seasonings used: 2 chicken bouillon packets, 1 sazon packet, 1 tbsp of cumin, crushed red pepper(1-2 tsp), garlic powder, black pepper, parsley ( add more seasoning if needed)

Directions

  1. Prepare vegetables and sausage.  Chop up onion and bell pepper, and get the sausage sliced.
  2. Rinse and soak rice in cold water, set to the side.
  3. Add olive oil into pan, let heat over medium high heat. Then add onion, bell pepper and sausage. I also add sazon seasoning and crushed red pepper. Let cook for 7-10 minutes, stir everything together during cook time.
  4. Next, add rice, mix together with sausage and vegetables. Then add at least 2 cups of cold water. (Add more water if needed) bring to a boil.
  5. Add seasonings, mix together. Cover pan and let cook for 20-25 minutes on medium low heat. Check rice after 15 minutes to give it a stir. Let it cook for another 10-15 minutes uncovered or until most of the liquid is gone.
  6. Add at least a handful of cheese and mix in. Then add cheese to the top of rice. Turn the pan on low to let cheese melt. Once the cheese melts, turn stove off.
  7. Let cool or serve right away!
