Ingredients
4-5 large bell peppers
1 cup of rice
1 lb of ground beef
1 can of diced tomatoes
1 tbsp-tomato paste
1-2 tbsp of olive or your favorite cooking oil
1 diced onion
1-2 cups of Shredded Mozzarella cheese
Directions
- First, get your onions chopped/diced, add to pan and start cooking ground beef.
- While the ground beef is cooking start cooking rice. (Suggestion, rinse rice twice with cold water, then cover with cold water, bring to boil then reduce heat to let cook)
- I add tomato paste to beef while cooking, this is optional. When the ground beef is done, drain if needed and add tomatoes(drain) and rice. Mix together.
- Preheat oven to 375 Degrees
- Now start preparing the peppers in a baking dish. Rinse and Slice the top of bell pepper and take out guts/seeds. Pat peppers dry if needed and drizzle a little olive oil over them. Bake bell peppers in oven for about 15-20 minutes before stuffing. Let cool a few before next step!
- Take a spoon and start adding your rice and ground beef mixture, then top with cheese. You can take a spoon or use fingers to pack the mix and Cheese in.
- Place in oven covered for about 20 minutes, then bake uncoverd for 10-15 minutes. Let the cheese melt and bubble😊
