This breakfast casserole is so fulfilling and easy to make. You can even make this recipe the night before . Pop it back in the oven or warm it up in the microwave for your kids before school. This is a great recipe for the holidays. Make it for your family for Thanksgiving breakfast, or Christmas breakfast/brunch. Serve with a side of creamy grits, oatmeal, or fruit. This dish is a hearty one and fulfilling by itself!

What kind of breakfast meat?
For my recipe I used sausage, but you are free to use bacon or your favorite breakfast meat. Also, I added veggies, you can always take that away for your picky eaters. Either way this casserole will be tasty! Let’s get into this dish.
Ingredients
1lb of bulk sausage( ground)
At least 2 cups of Shredded cheddar cheese
1 red bell pepper
1 yellow onion
1 bag of frozen Hash browns (I use shredded, diced will work too)
1 cup of Bisquick mix
2 cups of Milk
5 eggs
1-2 tbsp of cooking oil
Directions
- First, chop up your onion and bell pepper, then add to frying pan with ground breakfast sausage ( add tbsp of cooking oil if needed). Your heat should be on medium, cook sausage and vegetables until meat is brown.
- Preheat oven to 400 degrees
- In a mixing bowl, add bisquick, milk, eggs, salt and pepper. Mix very well. Set to the side.
- Take your baking pan, make sure its greased with butter or cooking oil, add your cooked sausage
- Then add your potatoes and cheese, mix together with meat.
- Now add your bisquick mixture to the potatoes, and meat.
- Cover top of casserole with more cheese. Put in oven covered for about 30 minutes. Then cook uncovered for about 8-10 minutes or until liquid is gone. Let cool for a few then serve!
