Chicken Parmesan Casserole

Chicken Parmesan Casserole is so yummy! This bake/casserole is easy to prepare and can even be prepared the night before. If your like me, I run out of dinner ideas during the week. With kids in school, work etc, there is nothing like something quick to throw together. When I say throw together I assure you it will still be comforting and delicious.

So what’s in it?

For this dish, you will be using most of the same ingredients for traditional chicken Parmesan pasta. You will be taking your breaded chicken, sauce, cheeses and combining them together to make the perfect casserole. For this recipe I used rigatoni pasta, but you are more than welcome to try with penne. Let’s get into the steps and ingredients.

Chicken Parmesan Casserole

Ingredients

  • Two skinless and boneless chicken Breast

  • 1 box of Rigatoni pasta

  • 1-2 cups of Italian bread crumbs

  • 1-2 jars of pasta sauce( I used traditional and four cheese)

  • 1 cup of Flour

  • 2 eggs

  • 1 cup of Mozzarella cheese

  • 1-2 cups of Parmesan cheese (shredded or grated)

Directions

  • First, take a medium size pot, add water, bring to boil. Then add your pasta. Cook until tender/done and set aside.
  • While your pasta is cooking start preparing your chicken. I butterfly cut my breast, then slice into tenders. Seasoned with garlic powder, and meat tenderizer.
  • After you season your chicken, take three bowls and put eggs, flour, and bread crumbs in the bowls. You will be using all three to coat your chicken. Dip chicken in flour first, then egg, last coat in bread crumbs.
  • In a frying pan, cover bottom with vegetable oil and about 1/4 of butter. Turn stove on medium/medium high. When your oil is heated , start frying the chicken. Cooking for about 7 minutes on each side or until nice golden brown.
  • Preheat your oven to 350 degrees
  • When your chicken is done, take your cutting board, cut chicken up into cubes/big chunks.
  • Now, put your drained pasta back in pot or mixing bowl. Add sauce , about 2 cups of mozzarella cheese and Parmesan cheese. ( nothing wrong with using a couple handfuls) Mix everything together.
  • Take your baking pan( I used a aluminum foil baking pan) Start layering your pasta mix, and then add chicken. You will be making two layers with chicken. Add more cheese as you layer. Also top with mozzarella cheese.
  • Cover your dish with aluminum foil and bake for about 45-60 minutes. Last 10-15 minutes can bake uncovered.
