Taco Bake, A.K.A Taco Pie is so good and easy to make. I am a sucker for mexican dishes! I dont mind if its authentic or american style. Taco Tuesday me anyday of the week lol. This taco pie recipe will have you feeling like your eating nachos and tacos in a casserole. Seasoned ground beef, corn, beans and tomatoes will be your filling. Topped off with cheese and Fritos Chips. I have seen this recipe made in a actual pie pan and cut like pie. You are more than welcome to make this dish name come to life. But I usually just make it in a small square baking pan or aluminum foil pan. Whatever you choose to do, it will come out awesome! This dish is great for potlucks, family gatherings, parties, taco Tuesday meal, or for whatever occasion you choose. Let’s get into this easy taco bake.

1 sazon packet, cumin,chili powder, garlic powder, red pepper flakes(a pinch), black pepper
Add your favorite taco toppings when done: sour cream , lettuce, tomatoes,salsa,guac
Ingredients
1lb of lean ground beef ( Lean is a suggestion, less oil when it cooks, makes great taco meat)
Corn- 1 1/2 cup(can or frozen/thawed cooked)
Black beans or Pinto-1 1/2 cup (can or dry cooked)
Fire roasted tomatoes with chiles (1 whole medium can)
1 yellow or red onion
1 bag of fritos lays corn chips
2-3 Cups of Fiesta mix shredded cheddar cheese
Directions
- First, get your onion chopped and diced up.
- Next, start cooking your ground beef in a pan. Add your onions, seasoning and cook your meat until brown/done. If you need to, drain your meat, then set aside.
- Preheat oven to 350 Degrees.
- Now it’s time to start layering your taco pie. First, drain and rinse your beans and corn if in a can. Add the beans and corn to a mixing bowl. Then add a drained can of tomatoes to the bowl. Mix everything together.
- Take your baking pan, cover pan with cooking oil spray( dont worry if you dont have oil spray, pour a little vegetable or olive oil in the pan spread it around with a paper towel or with a utensil to keep food from sticking)
- Open your chips and spread a few handfuls to cover bottom of pan, then add your cooked beef, covering your chips. You can also sprinkle a handful of cheese over your beef.
- Now, take your beans and corn mix, add a layer covering the beef and cheese. Then add the rest of your chips, layering across your mix. Add more cheese covering the top.
- Place foil or baking lid over your pan. Bake for about 45 minutes, checking at about 20 minutes. Remove foil or lid for that last 7-10 mins of baking. Cheese should be melted with chips nice and crispy.
