Ingredients
- 1 lb Ground Beef
- 2 large russet potatoes or 4-5 medium-sized potatoes (peeled and diced)
- 1 onion ( I use sweet onion for this recipe)
- 1 red bell pepper(optional)
- 1 tbsp of minced garlic or 2 fresh cloves chopped
- Olive Oil or your choice of cooking oil
- Beef bouillon ( 1-2tbsp)
- Water or you can you beef broth
- Seasonings Used: black pepper, all-purpose seasoning, cumin, chili powder, parsley

How to make it
- Prepare the Ingredients: Start by dicing your potatoes into bite-sized cubes, chop your onion, and mince the garlic. If you’re using a bell pepper, chop that as well.
- Cook the Potatoes: Heat about 1-2 tablespoons of olive oil in a large skillet or pan over medium heat. Add the diced potatoes( I add a little goya adobo all-purpose) and cook them until they start to soften and get a little golden on the outside (about 8-10 minutes). Stir occasionally to avoid burning. Once done, remove them from the pan and set them aside.
- Brown the Ground Beef: In the same skillet, add a bit more olive oil if necessary and cook the ground beef. Add Seasonings. Break it up as it cooks until browned and no longer pink. Drain any excess fat.
- Add the Veggies: To the beef, add the chopped onion, garlic, and bell pepper. Cook for 3-4 minutes until the vegetables start to soften.
- Combine: Return the cooked potatoes to the pan with the beef and veggie mixture. Add the beef bouillon or broth and give everything a good stir. Cover the skillet and let everything simmer for about 10-15 minutes, until the potatoes are fully cooked through and tender.
- Serve hot, and garnish with fresh parsley or cheese (if desired) for an extra touch!
