Sweet and Sour chicken is a classic Chinese American dish. One of my favorites when I get take out. When I don’t want to spend the money on takeout, I whip up a quick vegetable fried rice with sweet and sour chicken right at home. I must say it tastes better then going out anyday. Plus, this recipe is so easy! All you need is boneless chicken breasts or thighs. Some colorful bell peppers, onions and pineapples. For the sauce you are using ketchup, sugar, vinegar, garlic, soy sauce. The sweet and sour chicken batter will be so crispy and sweet when done. This batter only takes a few ingredients. THIS SAUCE IS NOT ONLY GREAT ON CHICKEN, IT PAIRS WELL WITH PORK TOO! OR JUST USE THE SAUCE FOR DIPPING JUICY TENDERS OR NUGGETS!
Ingredients
2-3 boneless chicken breast or chicken thighs
1 red, 1 orange or green bell peppers
1 white onion
Medium cut pineapples (at least 4-5), I buy them already cut.
Cornstarch (1/2 cup) for batter and 1-2 tablespoon for sauce
Flour (1-1 1/2 cup)
1 egg
cooking oil
1 cup of water
2 tbsp of minced or fresh chopped garlic
1/4 cup of Ketchup
1/2 cup of sugar
1/4 cup of Vinegar
2-3 TBSP of Soy Sauce
Directions
- First, prep your vegetables. Start chopping up your bell peppers and onion, set to the side.
- Now clean and cut your chicken up into medium small pieces. Season your chicken and set to the side.
- Next, make the chicken batter. Take a mixing bowl add your flour, cornstarch,egg, 1 tablespoon of oil and 1 cup of water. Whisk or stir everything together until you get a smooth batter. Get your oil hot in a frying pan. *Oil must be hot for this batter*
- Add your seasoned chicken to the batter, making sure your chicken is coated with the batter. When oil is hot start dropping your chicken. Frying for at least 7-10 minutes. When done frying your chicken set to the side.
- While your chicken is cooking get your sauce made. In a mixing bowl, add about 1 tablespoon of garlic, sugar, vinegar, soy sauce, ketchup, cornstarch and water(2 tablespoons). Whisk or mix everything together, add more sugar or vinegar if needed. Set to the side.
- In a pan add bell peppers and onions, a little oil. Let the vegetables saute for about 5 minutes. Then add your pineapples and sauce. After adding your sauce turn on low and add your chicken. Stir and toss your chicken around in the sauce and let simmer for about 5-7 minutes. Add sesame seeds if you choose then serve.
