Vegetable Fried Rice with Egg

Vegetable Fried Rice is yummy and easy to make! I am a big foodie for Rice. I literally could eat rice everyday if my body would allow it. Rice is just so versatile with so many meals. This recipe can be used for chicken, beef, pork, shrimp or vegetable fried rice. If you want a meat fried rice just add the cooked meat towards end of recipe steps. I use a frozen veggie mix from the local grocery store for less then $2.00. I love how Budget Friendly this rice dish is. Let’s jump into the recipe.

Serving Idea

This rice is really good with chicken wings, boneless wings like sweet and sour chicken, orange chicken, sesame chicken. The pairs are endless.

Vegetable Fried Rice

Ingredients

  • 1 1/2 cup of Parboil rice or Jasmin rice

  • 1-2 eggs

  • 1 yellow or white onion

  • 2-3 green onions cut

  • 1/2 bag of mixed vegetables/frozen peas and carrots( can works fine, just drain )

  • 2-3 tbsp of soy sauce

  • 1 tbsp of garlic powder or fresh garlic

  • 2-3 tbsp Olive or vegetable cooking oil

Directions

  • First, Cook rice, start by rinsing your rice at least 3 times. Rice is best cooked when brought to a boil first, then turned down low and stirred occassionally.
  • Next, get your onions chopped and put to the side. And get your eggs beaten/prepped and put to the side.
  • In your frying or saute pan start adding your yellow or white onions and mixed vegetables. Add oil to them plus your seasonings and soy sauce and saute for 5-7 minutes. ( stay on medium heat)
  • Now add your cooked rice and green onions, stir around for about 1-2 minutes or as needed(you may need to add more oil if rice starts to stick or turn stove down). If you are adding meat, this will be the time to add it.
  • Now, in a separate pan or move the rice over enough to have space in the pan to add your eggs. When the eggs start thickening and cooking, move it over to the rice. Stir everything together. Turn heat off or on low if now serving right away.
