Taco Pasta is one of my favorite quick meals to make for a weeknight dinner. This meal can be made in one pot or skillet! Taco pasta is a dish to put on your comfort food list! You will love the delicious tomato and taco flavor.
For this recipe, I used ground beef, but you are free to use ground turkey or chicken. To give this dish more flavor, I added fresh chopped onion and garlic. If you are a cheese lover, you definitely should top this pasta with cheese. This dish reminds me of a Goulash, but with a Mexican twist. Let’s get into these easy steps for making this pasta.
What you will need
- 1 Box of pasta – you can use shells, cork screw or rotini, the choice is yours!
- 1lb of ground beef
- 2 tbsp of Beef bouillon
- 1 yellow onion
- Fresh garlic (optional)
- 1 green bell pepper (optional)
- 1 -2 cans of fire roasted tomatoes (if your prefer just cut up tomatoes it works too!)
- 1 pack of mixed Mexican blend or cheddar cheese
- 1-2 tbsp of each seasoning/spice: cumin, chili powder, onion powder, garlic powder, 1/2 sazon packet (optional) Use your own Taco blend or a Taco seasoning packet
- 1 can of mild or hot green Chile’s (optional)
This Recipe can feed 4-5 people, double for more or if you plan to have leftovers!
How to make a Taco Pasta
- First, brown ground beef in a pan with green chiles, chopped onion, and garlic. Season ground beef with the spices I mentioned or add taco packet).Go to the next step while beef is cooking.
- Boil pasta in water, don’t cook the pasta all the way ( let boil for about 6-7 minutes), drain and set to the side
- Add at least 2 cups of water to the pot or skillet with ground beef, add beef bouillon and tomatoes as well. Stir and bring to a boil.
- When the liquid starts to boil, turn down and add the pasta.
- Let cook for about 25- 30 minutes on medium low heat covered, stir a couple times during.
- Wait until the majority of the liquid is out of your pasta, then add your cheese on top and let or mix it in, let it melt. On low heat, cook covered for another 7-10 minutes.
- Turn off, let it cool or serve right away when done.
