Crockpot Chicken and Rice

It’s a rainy day and also the first day of Fall! It’s that time of the year to bring those crockpots/ slow cookers out! To bring in the fall season, I decided to put on a pot of chicken and rice. This classic recipe is so comforting and easy to make. Also, a delicious budget friendly meal to keep the family full. This crockpot recipe takes about 4 hours. First, I place 2 seasoned chicken breasts into the crockpot on high heat. Next, I cover the chicken with chopped onions and bell peppers. After that the chicken and vegetables are covered with about 2 cups of cold water. Then I add 2 packets of chicken bouillon. I let the chicken slow cook for about 2 hours and 30 minutes, and then I add the rice. This dish is super easy to make, and the crockpot does most of the work for you! This is the perfect recipe for those cool fall and winter days. Let’s jump into the easy steps.

Cooking Ideas

Add your favorite vegetables, you don't have to stick to just onion and bell pepper. You can also top with cheese! Serve with your favorite sides.

Ingredients

  • 2 boneless and skinless chicken breast

  • 1 yellow onion

  • 1 green bell pepper

  • 2 chicken bouillon packets or 2 -3 tbsp

  • 1-2 cups of Jasmine, or parboil rice. Or your favorite rice

  • 1-2 tbs of butter (optional)

Directions

  • Rinse/Clean chicken breast and pat dry with a paper towel. Season chicken with seasonsing mentioned in details or your own blend.
  • Place chicken breast inside of your crockpot on high heat. Now, get the onion and bell pepper chopped ordices. Add these vegetables to the crockpot.
  • Take about 2 cups of cold water and added I to crockpot. Then add 2 packets of chicken bouillon or at least 2 -3 tbsp. If you are using chicken broth just add at least 1/2 the bottle.
  • Let the chicken slow cook for about 2 hours and 30 minutes. After 2 hours the chicken should be falling apart. Take a fork and separate the chicken, as much as you want ( I take one breast at a time and shred it, then place back into pot). Then add the rice, and butter mix around with chicken. Let slow cook for at least 2 hours. I suggest checking after 45 mins- 1 hour to make sure the the rice is cooking, add more water or broth if needed, and give the chicken and rice a stir. (the water may have evaporated but the rice still needs to cook.)
  • When the chicken and rice is done, you can keep it on low or turn it off. To reheat in crockpot, just place on low heat.
