Taco Lasagna /Casserole

This delicious and easy taco lasagna is the perfect comfort dish. If you are looking for a easy meal to make for Taco Tuesday, this is the recipe for you. This casserole is made with simple ingredients: tortillas, salsa, ground beef, beans, and cheese. I use chopped onions, chiles, and garlic for extra flavor. The seasonings I use on the beef is a homemade taco seasoning blend, but you are more than welcome to use a taco seasoning packet. I love how easy this dish is to put together, and it can be made the night before. This makes the perfect weeknight dinner. Also, a quick and easy weekend comfort dish for the family. Ingredients

  • 1-2 lbs of ground beef( suggest 2lbs for family of 4 or more)

  • 2- 16oz cans of refried beans or your choice of beans, black or whole pintos beans work’s fine

  • flour or corn tortillas ( I used 12 flour tortillas)

  • 1 bottle of your favorite salsa, I use medium store bought chunky salsa

  • 1 red onion(optional)

  • 1 clove of fresh garlic or minced (optional)

  • 1 can of chiles (optional)

  • 1-2 8oz bags of Mexican Shredded Cheese

  • 1 tbsp of Beef bouillon(optional) , add a little water if you do choose to add this ingredient

Directions

  • Brown/cook ground beef in frying pan/skillet. I add my seasonings, plus chopped onions, chiles, and garlic while beef is cooking. Then I add about a tbsp of beef bouillon, and a few tbsps of cold water(if needed drain oil before adding beef seasoning), set beef to the side when done.
  • Preheat oven to 375 Degrees
  • In a baking dish, start by adding tortillas to bottom, then add beans( I used refried beans), next add salsa, then seasoned ground beef, and cheese ( spread ingredients all across tortillas). Repeat layers, then for last layer top with refried beans,salsa and cheese( should have 3 layers, about 4 tortillas for each layer).
  • Cover the taco lasagna with aluminum foil or baking dish lid, place in oven for 40 minutes, then bake uncovered for at least 15 minutes
  • Let cool for about 5-10 minutes before serving
