I decided to make steak quesadillas for Cinco de Mayo! These quesadillas were so delicious and super easy to make! This recipe of course is nothing new, and it’s a classic meat choice for quesadillas. The best kind of steak to use for quesadillas, are ribeye, flank or skirt. I like using thin and boneless ribeye steak. First, I simply season and cook my steak. Then I add a Little oil to a frying pan, let that heat. Then I add my flour tortilla. When the tortilla begins to warm, I add pepper jack sliced cheese all over. Next, on one side I add the meat. The side with no meat is the side to flip over and press. I usually don’t add anything but meat and cheese, because I like to dip in salsa. I must say that onions and peppers added is a perfect match.

Ingredients
1 Pack of boneless beef ribeye steak (I used a pack of 2 steaks))
Pepper jack or Colby jack cheese sliced or shredded( I used 4 slices of pepper jack)
9 inch Round Flour tortillas (usually says for burritos)
At least 2-3 tbsp of cooking oil
Onions and bell pepper (optional)
Suggestion, serve with a mild or hot chunky salsa.
Directions
- Start by slicing and cutting steak into small cubes, then season the steak. Also chopping or slicing any vegetables you may use.
- Next in a frying pan add at least 2 tbsp of cooking oil. Turn stove on medium heat. I like to use olive oil, but this is optional.
- When oil starts to heat, add seasoned steak. I like my steak well done, Cook your steak to your liking. When steak is done cooking, set to the side to drip off any extra oil.
- I don’t like to use alot of dishes for this recipe, so I clean out the same pan I cooked steak in(optional). In the clean pan, add about 1 tbsp of cooking oil. Keep stove on medium heat!
- When oil starts to heat add the tortillas, move tortilla around if needed to keep from sticking, and layer or sprinkle cheese all around the tortilla, the cheese will start to melt. Add on one side the cooked steak (and veggies if you want).
- Next, flip over the side with no meat, and press down with spatula like you are making a grilled cheese sandwich. Then give it one flip to make sure both sides are nice and golden. (On medium heat it should only take 1-2 minutes for tortilla to toast, keep a good eye on it!)
- Last, transfer quesadilla to a cutting board or safe plate. Depending on the size of tortilla you used, slice in middle first, you may have 2-4 slices. Enjoy!
