Cajun Chicken and Sausage Jambalaya

Jambalaya is a classic southern dish! Originally made in Louisiana. This dish is packed with spices, vegetables, chicken, and sausage. I can’t forget, my favorite part rice! The rice is cooked into all the meats and spices to make a flavorful one pot meal. This is a great dish for family dinners and even meal preps. Jambalaya is a budget recipe because the meats used are inexpensive. You can use either boneless chicken breast or chicken thighs. And your choice of smoked sausage, ” I use 1 pack of Cajun Andouille sausage.” If you are a seafood lover, you can add shrimp, crab, or even crawfish. Seafood Jambalaya is very popular and also has sausage added to it. This dish is hearty and delicious, no matter what you choose to add. Let’s jump into this easy recipe.

cayenne pepper, black pepper, garlic powder, onion powder, paprika, 1 packet of sazon

Chicken Sausage and vegetables cooking

Ingredients

  • 1 pack of boneless chicken breast or thighs

  • 1 pack of Cajun or regular andouille sausage

  • 1 yellow onion

  • 1 red or green bell pepper

  • at least 3-4 sticks of Celery

  • 2 chicken bouillon packets(I use goya) or you can use chicken broth(2-3 cups)

  • At least 3 cups of water ( if not using chicken broth)

  • 2 cups of Rice ( I use parboil)

  • 1-2 tbsp of browning sauce (I use kitchen bouquet)

Jambalaya cooking

Directions

  • First, clean and pat dry chicken. Cut into chunks and season with seasonings mentioned in details, or your choice of seasonings. I use only a tsp of cayenne, this is optional to your heat tolerance.
  • Next, slice the andouille sausage and set to the side. Also, get the onion, bell pepper, and celery rinse and chopped up, set vegetables to the side.
  • Next, start cooking the meats. I fry my chicken in a separate pan until golden brown. In the pot I will be making the jambalaya in, I add at least 2 tbsp of cooking oil, let heat on medium. Then I add the andouille sausage, let cook for at least 5-7 minutes.
  • Then, add all the vegetables to the pot. Let cook down for 2-3 minutes. After vegetables cook down some , add the cooked chicken and rice, mix everything together.
  • Now, add water, chicken bouillon packets or cubes. Or just add chicken broth. Add more water or broth as needed. Also, add browning sauce. ( I add a little more, cayenne pepper, garlic powder, and black pepper as well)
  • Last, let the Jambalaya cook on medium low heat with lid on for at least 30-35 minutes. Stir jambalaya occasionally throughout cooking, let cook with lid off for at least 5 minutes. Majority of liquid will be gone when it’s done.
