Loaded Potato Soup

Soup season is here and this soup is definitely on my list. Loaded Potato Soup is a creamy and comforting soup. So delicious and great for a cold fall or winter day! Everything you love in a baked potato is in this soup. The best part about this comfort recipe is that it takes less than a hour to make! Potato Lovers let’s jump into this easy recipe!

Bowl of Loaded Potato Soup
Potatoes and vegetables cooking in chicken broth

Ingredients

  • 4-5 Potatoes (I use Russet)

  • 1 cup Heavy Cream

  • 32oz Chicken Broth

  • 2 tbsp of flour

  • 2 tsp of vegetable or olive oil

  • 5 sliced of bacon chopped

  • 1/2 chopped yellow onion

  • 1 cup of chopped green onion

  • 1 cup of cheddar cheese (add more if you desire)

  • 1 cup of chopped celery

  • 1 cup of chopped carrots

  • 1/2 cup of sour cream (optional)

Directions

  • First, prepare the potatoes and vegetables. Wash and peel skin off the potatoes. Chop potatoes into medium size pieces, this will help potatoes cook faster. If your using fresh carrots, peel skin off and slice or chop. Also rinse celery and green onions and get it chopped up. Last, get your yellow onion chopped.
  • Take out your sliced bacon, cut into pieces or use a knife.
  • Next, in the pot you will be making soup in, take a little cooking oil and add to pot. Turn stove on medium, add chopped bacon. Cook bacon until crispy. Then take out and place to the side. Turn stove on medium low and add yellow onion.
  • Now we will make a roux, while mixing onions in the bacon grease, start adding flour. Mix until smooth, then add chicken broth. Mix then turn stove back to medium heat.
  • When the broth starts to heat, add potatoes, carrots, celery, and green onion ( add seasonings during this step). Stir and let everything cook for at least 35 minutes. At 30 minutes check yo see if potatoes have softened.
  • Next, add heavy cream and stir, turn stove down low. Now you can add cheddar cheese and cooked bacon. Save some bacon to add for soup toppings if you desire. Let the soup cook on low for another 10-15 minutes. This will let the soup thicken up and melt cheese.
