Fried Mashed Potato Balls

I have been going potato crazy at my house! I told myself that I wouldn’t let my bag of potatoes go bad again. So here I am bringing you all another easy recipe, that of course has potatoes as the main ingredient. Recently, had to purchase another bag of potatoes because I forgot about them. So this past holiday I made a potato salad and I told myself I will finish the bag off with a easy recipe the following week. The first recipe that came to mind was these delicious mashed potato balls. These fried loaded balls are so freaking good and Easy to make. You can even use leftover mash potatoes to make them. I made fresh mashed potatoes since I didn’t have any left over. All you will need to do is let the mashed potatoes cool for about 30 minutes- 1 hour. Fried mashed potatoes make a great party appetizer or snack for the family. You really have to try this comforting recipe! Let’s jump right into it!

Fried mashed potato balls

Ingredients

  • 5-6 Potatoes (I used russet potatoes)

  • 6-8 slices of bacon

  • 1-2 cups Cheddar cheese

  • Cooking oil

  • 1/2 stcik of Butter

  • 1 cup -chives or green onion

  • 2 eggs

  • 1-2tbsp -Sour cream

  • 1 cup panko bread crumbs (

  • 1 cup of milk

Directions

  • First, if mashed potatoes are not already done, start preparing them. Quickest way to make homemade mashed potatoes is to peel and boil potatoes. When soft, mash and add milk or heavy cream.
  • Let mashed potatoes cool if fresh. Take your bacon and cook til crispy. ( I usually chop up bacon before cooking. Also, you are more than welcome to use pre-cooked bacon bits. While bacon is cooking start chopping up chives or green onion.
  • Next, in a bowl mix together mashed potatoes,bacon, cheese, chives and Sour cream.
  • With your hand or with a spoon, scoop mixture and form a ball.
  • Take two separate bowls: in one bowl beat two eggs and the other bowl pour panko bread crumbs.
  • Roll potato ball in egg first then roll in panko bread crumbs. Make sure whole ball is coated. (Lay balls on parchment paper or non-stick tray/pan
  • Add oil to frying pan, turning heat to medium high. When oil is hot add potato balls one by one, frying on both sides til golden brown. If your are not deep frying you may need to move balls around to make sure crispy all over. Should take up to 7 minutes to fry.
