Bacon Egg and Onion Fried Rice(+Recipe Video)

Bacon Egg and Onion Fried rice was first introduced to me as a kid. My Grandma would make it for us and it was definitely one of my favorites. I didn’t know or care at the time, but this was a meal she would make when we were running low on food. It was in my very first apartment, I was broke, working and going to a community college eating noodles everyday. I got back in touch with budget/struggle meals. I started making this rice almost every week. Still I make this meal whenever I crave it, funds low, or just run out of things to cook. This rice recipe comes in handy on those busy work weeks or Saturday nights you don’t feel like cooking a fancy meal. It’s just so simple and easy to prepare. Let’s jump into how to make this yummy rice. Oh yea, if your not a fan of pork/bacon, this rice can be made with your choice of meat or just take the meat out completely.

Bacon Fried Rice with Vegetables

Ingredients

  • 1 cup-White rice-parboil or long grain

  • 1 yellow onion chopped or diced

  • 5-8 slices Raw bacon (chop or cook whole)or meat of your choice

  • 2 eggs

Directions

  • Start with preparing rice in a pot, cook until tender and done (wash rice before boiling) 15-25 minutes to cook.
  • Now start cooking your bacon in a pan you will fry rice in., the bacon grease will give flavor to the rice.(unless you prefer not to, then use olive oil for stir fry step)
  • Dice your onions and put them to the side and crack your eggs/whip and put to the side.
  • Take your onions and add them to the grease pan, saute until somewhat soft, for best flavor start adding seasoning while onion is sautéing.
  • Then add your rice, bacon to the pan. I piece my bacon up with my hands. Stir everything together real good on medium low heat. ( Add oil if needed)
  • In a separate pan or same pan cook your eggs , then stir in with the rice. Serve right away or let cool for a few minutes!
