Loaded Chicken Baked Potatoes

Chicken baked potatoes is a ultimate comfort food dish! If your a fan of traditional loaded baked potatoes, I’m sure you will love this easy recipe. The tender chicken on top of the baked potato is one meal by itself. But you can definitely serve it as the main entree! If this is your style go for it. You can add vegetables to it, like broccoli or just have a any vegetable you like on the side. There a few main ingredients, like cheddar cheese, bacon, and green onion (or you can use chives). This simple recipe has everything you want in a traditional loaded Potato, but better! Let’s jump into the recipe.

Seasonings used on chicken:

Ranch seasoning, garlic powder, onion powder, paprika, garlic and herb (dash), chicken seasoning

Substitution for chicken: beef, pork, shrimp, turkey

Ingredients

  • Russet potatoes ( as many as you need)

  • 1 pack of chicken boneless and skinless thighs or breast ( I like to use thin sliced breast)

  • Slices of fresh bacon or a pack of bacon bits (depending on how many potatoes you are making, 8-10 slices cooked)

  • 1 bag Cheddar cheese ( mixed cheddar is a great choice)

  • Chopped green onions or chives (optional)

  • 1/2 cup of Olive oil or your choice of oil (add more as needed)

Clean russet potatoes

Directions

  • First, preheat oven to 375. Then rinse your potatoes really good and place them on a baking sheet. Cover each potato with at least 1-2 tbsp of olive oil.
  • Bake for about 50-60 minutes until potato is soft. Take potatoes out of oven soon as its done.
  • While potatoes are baking, start preparing chicken. Clean/rinse chicken and season chicken. (Ranch seasoning taste awesome on this chicken recipe)
  • Next, take out frying pan and cover bottom with olive oil or vegetable oil. Turn stove on medium high heat. Add chicken when oil heats, and cook on both sides for at least 7 minutes or until done/ golden brown. Set to the side when done to cool.
  • The chicken will be chopped up into small pieces when cooled, until then start Preparing the toppings: bacon, onions, cheese. Also take your baked potatoes and slice down middle with a knife. Push and massage up cooked potatoes on its sides, so the inside will open up.
  • First, sprinkle some of cheddar cheese, then add cooked and chopped chicken. Followed by more cheese and bacon bits. Place back in oven for 8-10 minutes, until the cheese melts into chicken. Let cool, then add your extra toppings!
