One Pot Chicken Stew

This one pot chicken stew is so comforting and delicious. Such a easy recipe to warm you and the family up on cold days. This one pot recipe is made with tender chicken chunks, and loaded with vegetables. I use chicken broth to slow simmer all the ingredients. This is one of those recipes that you can just sit and smell the cooking process. You can serve this dish with rice, mashed potatoes, or bread. Or just serve it by itself! Chicken Stew

Ingredients

  • 1 pack of boneless and skinless chicken thighs (I used family pack size, has at least 8-10 thighs)

  • 1 yellow onion

  • 1 green or red bell pepper

  • 2 raw Carrots ( use pre peeled and sliced if you want)

  • 2-3 cloves of fresh garlic or 1 tbsp minced garlic

  • 2 Yukon or russet potatoes

  • 32-48oz Chicken broth, for smaller pack of chicken I suggest a 32 oz

  • 2-3 tbsp of flour

  • At least 1/2 cup of vegetable or olive oil

Directions

  • First, Prep your vegetables and chicken. Rinse/clean and pat dry chicken thighs (season chicken thighs). Chop up onion, bell pepper, and garlic. Peel and slice Carrot, and potatoes. Cut potatoes into medium size cubes.
  • Next, in a pot add cooking oil and turn stove on medium high heat. When oil heats, start adding chicken thighs. Split chicken thighs in half for smaller pieces before adding to pot.
  • Now, turn down heat to medium. Then add onions, bell pepper, and garlic. Saute for about 2-3 minutes. Then add sliced carrots.
  • In a cup mix together, flour and about 1/2 cup of chicken broth. Mix until flour dissolves. (Add more chicken broth as needed) Then pour into pot, give everything a mix then add chicken thighs back to pot.
  • Add the remaining chicken broth, and give everything a couple of stirs. Let cook on medium heat for about 25 minutes.
  • Then add potatoes, let simmer on medium low heat for about 25-30 more minutes until potatoes are soft. Turn pot on low if not serving right away or turn completely off.
