Breakfast Scramble

This Breakfast Scramble dish is so delicious and easy to make! With every bite you get a piece of breakfast variety. The ingredients are simple and fresh. I use red potatoes, eggs, sausage and vegetables. Then top it with cheddar cheese, while the skillet cools. The best part about this recipe is that it can definitely be modified. You can substitute the meat for your choice, or go meatless. Also, the potatoes don’t have to be red, russet potatoes work too! Breakfast Scramble

Ingredients

  • 5 Red potatoes ( red potatoes usually come small) or use 3 regular potatoes

  • 5 eggs

  • 16 oz roll of breakfast Sausage (I used Jimmy dean) or 1 pack of sausage patties

  • 1 cup of Cheddar Cheese or your choice of cheese

  • 1 yellow onion

  • 1 red or green bell pepper

  • At least 1/2 cup of Olive or vegetable oil

Directions

  • First prepare potatoes, rinse potatoes well, then cut into medium size pieces. If your using regular potatoes, make sure to peel skin. I leave on skin with red potatoes. Also, get your onions and bell peppers diced up and set to the side.
  • Now, cover bottom of skillet with cooking oil, turn stove on medium heat. Add potatoes to pan when the oil starts to heat. Cook potatoes until tender/soft. Go to next step while potatoes are cooking, potatoes will take about 15 minutes to cook. Make sure to stir potatoes so they don’t stick to bottom.
  • Next, take out the sausage and start cooking it in a pan, separate from the skillet you will be making potatoes and the whole scramble in. You want the sausage ground up. If your using bulk sausage, just cook until brown/done. If using sausage Patties, just piece up with spatula while it’s ground. Place sausage to the side when done.
  • When potatoes start to tender, start adding onions, and bell peppers. Mix everything together. Turn down stove to medium low heat, let cook covered for about 2-3 minutes. This will make sure potatoes are done as well! Then uncover and add ground sausage.
  • Now, in a separate pan (Tip: you don’t have to use more than two pans, just wash out the pan you cooked sausage in) Scramble up eggs softly. Then add and mix it into the potatoes and sausage. Turn stove on low or completely off, then top breakfast scramble with cheese. Let cheese melt, and Enjoy!
