Broccoli Cheddar Soup

Broccoli cheddar soup is so flavorful and Easy to make. My broccoli and Cheese lovers, this one is for you! With winter still here, it’s safe to say soup recipes are a must. We all want a soup that is fulfilling and can keep us warm right? Broccoli cheddar soup is filled with broth, onions, garlic, carrots and of course cheddar cheese and broccoli. The news is that you don’t have to go to Panera Bread or any other restaurant to enjoy this soup. I’m going to explain how to make it right at home, in less than a hour. This includes if you add the prep time to cooking. Within 30 minutes you will have a yummy soup in your bowl. Let’s start cooking!

Bowl of broccoli cheddar soup

Ingredients

  • Frozen or fresh Broccoli florets (I used 1 whole 12 oz bag)

  • 1 Yellow onion

  • Flour (3-4 tablespoon)

  • Shredded fresh or bag carrots (1 cup)

  • Minced or chopped garlic (1 tablespoon)

  • Sharp or mild Cheddar cheese(1 whole bag- 8oz or block)

  • Butter (1/2 stick)

  • Chicken or vegetable broth(2 cups or half of a 32 oz)

Directions

  • First, get your vegetables/ingredients prepped. Chopp up your onions, carrots, garlic, and broccoli if needed.
  • Next in your pot, melt butter and add chopped onion. Cook down onion for 1-2 minutes then add garlic. Stir and cook for another minute.
  • Now, add flour, you are going to make a smooth roux. Stirring flour until smooth and no lumps. Then add chicken broth.
  • Then add the broccoli and carrots, bring your heat to medium high and let cook for about 7-10 minutes. During this time you can add your Seasonings.
  • Last, reduce heat, slowly add your heavy cream and Cheddar cheese. Stir in and let simmer for about 7-10 more minutes. Then serve.
