Broccoli Cheese Stuffed Chicken Breast

This stuffed chicken recipe is filled with broccoli, juicy red bell pepper, cream cheese, cheddar and parmesan. This is a great recipe to make during the week. Broccoli cheese stuffed chicken breast

Ingredients

  • 1 pack of Large boneless chicken breast

  • Bag of frozen broccoli or fresh

  • 1 Red bell pepper

  • 4-6 oz Cream cheese

  • 1 cup- Shredded Cheddar cheese

  • 1 cup-Shredded Parmesan cheese

  • at least 1/2 cup of Olive oil or your preferred cooking oil

Chicken Breast Stuffed with cheeses, broccoli, red bell pepper

Directions

  • First, rinse/clean your chicken breast, then pat dry and season.(Use seasoning listed or your own) Rub chicken with a little olive oil.Put to the side.
  • Take about half or whole bag of broccoli (if you are make more than two breast). Cook in a small pot or put in microwave. Just add a little water to your bowl or pot of broccoi/ steam for about 3-5 minutes in microwave or until soft. While broccoli is cooking get your red bell pepper chopped up.
  • Chop up broccoli in small pieces
  • In a mixing bowl, add your soft broccoli, parmesan, cheddar, cream cheese and red bell pepper. Mix everything together. Suggest using a cup of each cheese and add to your desire.
  • Now, take your chicken breast cut open enough to add your mix. Your breast should be open like a pocket(Do Not Split all the way in half). Start stuffing your chicken with the mix.
  • Preheat Oven to 375 Degrees
  • In a frying pan add about 2 tablespoons of olive or vegetable oil. Add your stuffed chicken and sear on both side for about 5-7 minutes.
  • Place your chicken in a baking dish or pan, and cover with lid or aluminum foil. Bake stuffed chicken for 30 minutes. Then bake uncovered for at least 5-7 minutes!
