Cheesy Shepherd’s Pie(ground beef)

This classic shepherd’s pie recipe has been around for a long time. Another name for this pie is cottage pie. This easy recipe can be made with either ground beef or ground lamb. Today I will be bringing you this quick recipe with ground beef. This is a nice meal for Sunday dinner or a quick weeknight dinner. Top the ground beef off with homemade or instant creamy mash potatoes. Shepherd’s Pie is filled with a mix of green, orange, and yellow veggies and cheese. My mouth is watering just talking about it. Spoonful of Shepherds Pie

Ingredients

  • 1lb of Ground Beef

  • 7-10 Russet potatoes or use instant mashed potatoes

  • 2 tbsp of Tomato paste

  • 1 yellow onion

  • 1 tbsp or 1 packet/cube of Beef Bouillon, Also can use a 1 cup of beef broth

  • 1 cup of milk ( for homemade mashed potatoes)

  • 1/2 stick of butter (homemade mashed or can add to instant)

  • 1 bag of Mixed frozen vegetables or 2 cans if your prefer( I used a 12oz bag)

  • 8 oz bag of shredded Mild cheddar cheese

Directions

  • (SKIP THIS STEP IF USING INSTANT POTATOES) First, take your potatoes peel and wash and cut into medium sizes cubes or pieces. Place your cut potatoes in water bring to boil. Cook for 20-30 minutes or until tender and soft.
  • While your potatoes are boiling, cook your ground beef until brown, and add chopped onions. Also season your beef and add tomato paste, and beef bouillon or broth when beef is close to brown ( if not using beef broth, add a 1/2 cup of water to bouillon), stir then add your frozen vegetables. Mix everything together. Let simmer for 5 minutes on low heat.
  • (SKIP THIS IF USING INSTANT) When potatoes are done, drain water from potatoes. Then add 1 cup of milk, butter, garlic powder, salt and pepper. Whip or mix your mash potatoes, add more milk as needed.
  • Preheat oven to 375 degrees
  • In your baking pan/dish add the beef mix, then top with some cheese.
  • Next, top the beef mix with mash potatoes, spreading the mash across the beef mix. Then adding more cheese to top it off.
  • Place the pie in oven covered for about 30-35 minutes. Baked uncovered for the remaining 20-25 minutes. Cheese will be melted and a nice crisp top when done.
