Fried Chicken Casserole

Have you ever had the famous KFC fried chicken bowl? Well, this is exactly where this recipe is inspired. This fried chicken casserole is very easy to make and the perfect comfort meal. Super flavorful and will have you and your family coming back for more!

This casserole has crispy fried chicken, creamy mashed potatoes, corn, and brown gravy, just like the KFC chicken bowl. The best part of this copy cat dish is that it’s made fresh right at home. You can use simple ingredients to make it even easier to prepare. Instead of making homemade mashed potatoes, I usually go for the store bought pouches. Now, I prefer to batter and fry my own chicken pieces and make my brown gravy from scratch (Check out my brown gravy recipe). You can buy frozen tenders or popcorn chicken. The gravy can also be bought pre-made in the store. This isn’t a casserole without topping with cheese, so I use shredded cheddar. The bake time is about 40-50 minutes. Black pepper, goya adobo all purpose, garlic &herb (Dash), garlic powder, onion powder, paprika, chili powder, 1 goya chicken packet

Serving Ideas

Serve with biscuits, dinner rolls, cornbread.Pair with salad, Mac & Cheese or just keep it simple! This dish is fulfilling by itself!

Ingredients

  • 1 pack of boneless and skinless tenders or breast ( or get 1 bag of frozen popcorn or tender chicken)

  • Two 8oz Pouch Mashed potatoes( I used roasted garlic)

  • Two 8-9oz cans of drained and rinsed corn, use 1 frozen bag if you like

  • At least 2 cups of gravy ( use gravy to your liking)

  • 1 8oz pack of shredded cheddar cheese ( I only used half the pack, add as much cheese as you want!)

  • At least a 1/2 cup of mustard for chicken(optional)

  • At least 1 cup of flour for chicken, add more if needed

  • At least 48 fl oz of vegetable oil or your choice of cooking oil to fry chicken

Directions

  • Prepare chicken by cleaning chicken and patting dry with a paper towel. Slice chicken into medium size pieces. Add seasonings to chicken that are in details or your own blend. Also, mix in mustard: this is optional but it gives the chicken a nice crunch.
  • Add flour to chicken, then heat cooking oil in a frying pan or deep fryer. Fry chicken til golden brown and done and set to the side. GO TO NEXT STEPS WHILE CHICKEN IS FRYING.
  • Prepare mashed potatoes. Just follow directions on pouch. Or make homemade mashed potatoes. Also, prepare gravy however you choose. I prepared one small pot of gravy for this recipe. Using butter, flour, beef bouillon and water. Make sure to check my gravy recipe for more steps.
  • Preheat oven to 350 degrees.
  • Rinse corn, drain and set to the side
  • Take out a baking dish and spread mashed potatoes in dish for your first layer. Then add corn, chicken and gravy. Make sure all of ingredients is spread evenly. Last add shredded cheddar cheese to the top.
  • Cover dish with aluminum foil or baking lid, let bake for at least 25 minutes. Then let bake uncovered for another 20-25 minutes.
  • Let cool for at least 5 minutes before serving, Enjoy!
